We have enjoyed cooking breakfast for our guests and so often we have requests for our recipes. We would like to share some of these with you. You will find that they are not only delicious, but easy to make.
Cindy's Quiche
Beat eggs lightly and add biscuit mix, melted butter, milk, salt and pepper. Pour into a 9" greased pie dish and add cheese and other desired items. Bake at 350° for 45 minute. Remove and let stand for 10 min. Serves 6 Persons. ENJOY!
Jon's Bran Muffins
Combine all dry ingredients in a bowl. Beat eggs, milk and oil together. Add to dry mixture, mix well. Grease muffin tins and fill 2/3 full. Bake at 425° for 12-15 min. The wonderful thing about this recipe is that the batter can stay in the refrigerator for up to 6 weeks. DELIGHTFUL!
*Cindy likes to bake these, not only in regular size muffin tins but in the small almost bite size muffin tins. Add a small amount of your favorite jelly or jam on the inside and call them "Jon's Surprise Bran Muffins".
Eggs Benedict with White Butter Sauce
Butter Sauce
In a sauce pan, melt butter. Add flour, salt and pepper. Stir for 2-3 minutes. Add milk into mixture and stir continuously until thick. Serves 6-8 People.
Make your sauce in advance, you may reheat it, but stir it on low when you do. Heat your Ham in a warm oven and toast you English Muffins. Poach your eggs in a low boiling water (we like to put a small amount of white vinegar in the water to keep the eggs tightly poached). Place 1 toasted English Muffin on a plate, open and put 1 piece of ham on each. Place a poached egg on top of each one and cover with Butter Sauce. Sprinkle with Salt, Pepper and Paprika. This is by far our family's favorite breakfast. A perfect Sunday Start.
